Brew cafe quality coffee without the fuss or waste of traditional paper filters. The Kone has been carefully engineered to make brewing delicious pour over coffee at home a breeze, while living up to the rigorous standards of the best cafes. The Kone fits perfectly inside your 6, 8 or 10 cup Chemex coffee maker, and Ratio glass carafe.

Weigh and brew the same as you would for Chemex or other pourer dripper.
The ratio we recommend is 30g coffee to 500ml water (roughly 1:16). The nice thing about the Kone is that it doesn’t stall when doing larger amounts or an especially dense coffee, so we’re able to max out the capacity of our kettle, which is 900ml for the Fellow Stagg: 60g/900ml.

Because the drip is faster, grind a bit finer than you would on the Chemex with a paper filter.
On the Fellow Ode grinder, we use a 5-2 setting.

These instructions are for the 30g/500ml amount. You will need a scale and a timer.
Place the Kone in your CHEMEX and dump your ground coffee into the Kone.
We will do 4 pours in total. The first pour is for the bloom (to allow the grounds to offgas the remaining CO2).
Start your timer.
(1) Pour 60ml water, rather rapidly creating some agitation. Let the coffee bloom for 45 seconds. If the coffee is still fresh, you should see some bubbling, like the mud pots at Yellowstone.
(2) Pour to 200ml. With two hands, give the CHEMEX a gentle swirl to level out the grounds. Let drip through.
(3) Pour to 350ml. Swirl. Drip.
(4) Pour to 500ml. Swirl and let drip. Once fully dripped, the bed of grounds should be flat and there should be no grounds caked to the sides (other than the fines (which is fine)). Total brew time should be around 5 minutes.
And that’s it! We recommend taking a minute and washing the Kone with a gently soap to prevent any build of oils.
For a 36g/600ml brew, use these pour markers: 75ml (bloom), 250ml, 425ml, 600.
